RECIPE: Start at the very beginning – making the cake to decorate

18cm Pound Cake

Ingredients

175g butter

175g caster sugar

250g self-raising flour

3 eggs

15ml (1tbsp) milk

Method

Baking time: 1-1½ hours

Grease and line cake tin and pre-heat the oven to 150 degrees.

If using a mixer follow these instructions: Sift the flour into the bowl of mixer and add all of the other ingredients. Start on the slowest speed to combine the ingredients and then switch to the highest speed for one minute until smooth, pale and creamy.

If you are mixing by hand, make sure the butter is very soft. Beat the butter and sugar together until creamy. Add the eggs and beat until smooth. Sift in the flour and gently fold it in with a metal spoon.

Spoon the mixture into a cake tin and smooth the top.

Put it into the preheated oven and bake until the cake is firm to the touch and pulling away from the sides of the tin (insert a metal knife or skewer and if it comes out clean, the cake is done). Allow to cool for 5-10minutes before removing from the tin.
