We are trying our hand at baking for this week’s recipe from the Outcook Home Cookery School in Alnwick.

This recipe has been used at the recently-formed Baking Club at the venue in Bondgate Without and uses a familiar local ingredient – Alnwick Rum.

COSMO AND MOJITO CUP CAKES

INGREDIENTS

150g sugar

150g margarine

150g self-raising flour

Shot of Alnwick Rum

½ lime – juice

2 drops of peppermint extract

2 eggs

ICING

100g butter

250g icing sugar

Shot of Alnwick Rum

¼ lime – juice

Peppermint essence

METHOD

Soften the margarine, add the sugar and cream. Sift in the flour, mix, add eggs, and mix until smooth.

Add the rum, lime juice and peppermint extract.

Bake for 15 minutes at 180 degrees Celsius.

Let the cakes cool. Soften the butter, add the icing sugar, rum and peppermint extract.

Mix until smooth, pop into an icing bag and decorate your cakes!
